Hi dear bloggers and food lovers, happy weekend!! How are you all doing today? This weekend I made something sweet and pretty, recently I love the pink color so much and as a strawberry lover, I decided to make something light and sweet: a mini strawberry cheesecake and no oven needed. Seriously, this is super easy to make and can be a great alternative if you鈥檙e tired of the usual cake textures. Okay, let鈥檚 get right to it
Ingredients:
- 3 sheets of gelatin
- 100 ml ice water
- 100 grams red velvet crumble
- 3 tbsp melted margarine
- 150 grams powdered whipped cream
- 2 tbsp cream cheese spread
- 50 ml warm milk
- 60 grams strawberry-flavored drink mix
- 5 tbsp hot water
Instructions:
- Place the red velvet crumble in a bowl
- Add the melted margarine to it
Mix it into the crumble
Transfer to a baking pan lined with cake roll plastic wrap
- Press the crumble firmly into the pan, then chill in the freezer
- Meanwhile, prepare the warm milk and add the gelatin that has been bloomed in ice water earlier
Stir until well combined
Set aside
- Place the powdered whipped cream in a bowl
- Add ice water to it
- Beat with a mixer until the whipped cream begins to stiffen
- Add the cream cheese to the whipped cream
- Beat until well combined
- Add the milk and gelatin mixture to the whipped cream
- Beat again until well combined
Divide the mixture into 2 portions
Dissolve the strawberry berry powder mix in hot water
- Add 2 tbsp of the strawberry drink mixture to the whipped cream
- Stir until well combined
Pour the cheesecake batter into a pan lined with red velvet crumble
Chill in the freezer for about 30 minutes
- Add the remaining strawberry drink mixture to the leftover cheesecake batter until the color is darker than the previous batter
- Once the first layer has set, pour the darker batter on top
- Freeze the cheesecake until set (I let mine sit overnight)
- Decorate as desired
- Mini Strawberry Cheesecakes (No-Bake) are ready to eat
