I also do oil pulling in the morning with coconut oil, look into that :)
First i soak the rice and rinse several times.
Then cook :) set to the side.
Prep work.
Saute the paste with coconut oil until fragrant. do not burn!
Then pour a little coconut milk and simmer for a few minutes. you will see the red oil finally floating at the top.
This is key to a good curry.
Then add a little organic broth with the carrots, green beans and mushroom simmer for 5-6 minutes. I covered it!
Then add the palm sugar, and lime leaf simmer a few more minutes.
Then add more coconut milk as you like.
Add the bamboo and green peppers for a few more minutes.
All of these steps depend on how you want your vegetables.
Add the tomatoes and fish to poach in this fragrant sauce until done.
Add the fish sauce at the end with peanuts and turn off the heat.
Garnish with shredded lime leaf and cayenne pepper.
Panang is usually a thick curry but that is up to you :)
ENJOY!!
