Staying with these Amy's meals lately, came across another quality item, this one was called the Santa Fe Enchilada. The best thing about for me was the bottom of the bowl, a bunch of pinto beans and black beans. Extra hearty. The melted cheese over the top was another high quality addition. I felt like it was lacking spice, but that's on me. I need to buy a nice bottle of hot sauce for the burritos and bowls I've been experimenting with recently. Any suggestions? I thinking something along the lines of garlic chipotle, get that garlicy smokey spice if you know what I mean. Always try to add to it to make it better.
