How's Going Friends 🧡

It's been hot since Sunday, but luckily we are stil in the 30s, while other places in Canada are experiencing worse heatwave than us here in Northeast BC. However, it's not just hotness and humidity that we have up here though, the smoke was so bad that I had to use my inhaler throughout the day, yesterday 😵‍💫 Hot and humidity, I grew up in those, but not this annual wildfires tho 🫤

Good thing about the hotness tho, my clematis blooming 😍😍😍😍 Today 3 flowers out. Yesterday was one only 😊 Am happy. The peonies I moved from front to back, they seem to be struggling. I know they don't like to be moved/disturbed, and it would take a year or two for them to establish their comfy zone, but am so worrying for them 🫤

Anyhoo.

For today's recipe, another one with tomato paste 😁 This time, I baked Festive Sweet Rolls, almost like cinnamon rolls.

3/4 c almond milk
1/4 c sugar
1 1/4 tsp active dry yeast (I may have said 1 1/2 tsp in the vlog, that is not correct 😅)
3.5 c flour
1/2 tsp salt
1/2 c white choc chips
1/4 c walnut bits
1/2 c dried cranberries
1/4 c tomato paste
2 tbsp sunflower oil
1 egg

Pour almond milk into a bowl, add sugar, heat in microwave for 40 seconds, then stir in yeast, let stand for 10 mins

In another bowl, mix oil, paste, and egg, set aside

In a clean bowl, mix dry ingredients, then pour in paste mixture and yeast mixture, knead. Cover with cling wrap and let stand until doubled in size (at least 30 minutes)

Roll flat dough into a rectangular and slice into strips, then roll into individual sweet roll. Sprinkle top with sugar.

Bake rolls on preheated 375 for 20 minutes and enjoy 😉
