Talking about classics, this is an old italian recipe very popular in Italy as in other countries.
Here i did my version :
INGREDIENTS:
2 tbsp of Olive oil
1/2 cuttle fish
peas
1/2 onion
2 sliced serrano ham
1 tangerine
1 tsp of parsley
salt
chilly oil quantum
Cooking instructions:
Place the cuttle fish inbetween two pieces of greaseproof paperand beat it a little..
Cut the cuttle fish in thin sliced..
then boil it in water with a piece of tangerine and some parsley for one minute..
Cook in a pan the peas with onion, olive oil and some of the aromatic water...
Blend half of your peas to puree, bake the serrano ham at 180c° for 12 minutes. Bake as well some thin sliced of sourdough bread, that it will make the difference!!
Start to plate it....
finish the dish with a touch of chilli oil :)
Very spring/summery dish to me...to accomplish with a nice glass of chilled glass wine..
