I guess like many we have lots of odds and sods in our cupboards that sit there for months on end but never get used. I'm currently trying to work my way through this stuff before it goes out of date.
This weekend I found myself with a packet of Super Noodles (chow mien flavour), half and onion and bell pepper. It was time to get creative! ... well about as creative as you can get with noodles, onion and pepper. The noodles got simmered for 4 minutes as per the instructions and the onion and pepper got stir fried in a searing hot pan. It all looked a little dull once done and there was a lack of protein. I've seen that fried eggs are sometimes added to some asian noodle dishes so thought what the hell and gave it a go. It was actually pretty nice! Breaking the yolk and mixing it with the noodles turned it into something a little more interesting.
I like spice so also added lashings of hot sauce. Although the aim was just to use stuff up, this is certainly something I'd consider making again as a meal.
Jolly delicious!
I'm guessing the egg could be replaced with some silken tofu to make it vegan.
