Assalamualaikum everyone. I hope you all are doing well. Alhamdulillah I am also doing great. I really enjoy cooking and baking. For me cooking is not only about preparing food. It is also about trying new things and learning something different every time. I always like to experiment with different recipes and different ways of making simple food. Sometimes I follow a traditional method and sometimes I try a new and easier method. This is what makes cooking and baking more interesting for me.I especially enjoy baking because there are so many things we can try at home. We can make cakes cookies cupcakes muffins and many other delicious things with simple ingredients. I also like to see how a small change in the method can make the whole process easier.
Today I decided to try something a little different. I wanted to make muffins but instead of using an electric beater or a hand beater for the main mixture I decided to use my blender. Usually when we make cakes or muffins we use a hand beater or an electric beater to beat the eggs and sugar. But I thought why not try the blender? Almost every home has a blender and it can make the process very easy and quick.
So today I tried making these soft and delicious muffins using a blender. I was actually very happy with the result. The muffins turned out fluffy golden and really delicious. So let me share the recipe with you.
2 eggs
1 cup sugar
A little vanilla essence
1/2 cup oil
1/2 cup water
1 1/2 cups all-purpose flour
1 tablespoon baking powder
First add two eggs to the blender. Add one cup of sugar and a little vanilla essence. Close the blender and blend everything well.
Keep blending until the eggs and sugar are nicely mixed and you can see a light and foamy mixture. The foamy texture is a good sign because it helps make the muffins light and fluffy.
Once it is nicely blended keep it aside for a moment.
Now take a clean bowl and add one and a half cups of all-purpose flour. Add one tablespoon of baking powder. I recommend sifting the flour and baking powder twice. Sifting helps remove any lumps and also adds air to the flour which can help give the muffins a soft texture.
Now go back to the blender. Add about half a cup of oil and half a cup of water to the egg and sugar mixture. Blend everything again for a few seconds until all the wet ingredients are well combined.Now pour this wet mixture into the bowl with the dry ingredients.Using a hand beater mix everything well. Do not overmix the batter. Just mix until the ingredients are combined and you have a smooth muffin batter. Now take your cupcake or muffin mould and grease it well so the muffins do not stick to the mould.
Pour the muffin batter into the moulds. Do not fill them completely because the muffins will rise while baking. Leave some space at the top. Meanwhile preheat your oven to 180°C. Once the oven is properly preheated place the muffin tray inside and bake for about 20 minutes. The baking time can be slightly different depending on your oven so keep an eye on them. When the muffins become beautifully golden and a toothpick inserted in the center comes out clean they are ready.
Take them out of the oven and let them cool for a few minutes. And here we have our easy homemade blender muffins. You can see how soft fluffy and beautiful they look. I was really happy with the result because this method was so simple and I did not need an electric beater for the main mixture. The muffins were not only beautiful to look at but they were also really delicious to eat. They were soft from the inside with a lovely golden color on the outside.
