Rucola (arugula) salad with tofu and orange - recipe ๐๐ฅ
As soon as the summer came, I noticed myself having more and more salads everyday. And although I am vegan and my parents always tell me "you only eat grass and lettuce" it is so far from the truth. ๐
I almost never enjoy salads because I get over them very quickly and then I think it is such a boring meal, let me make seitan meatballs instead. ๐
However, greens are very important for our health and if you found yourself in a situation like mine where salads are just a boring food, I have a suggestion to improve them a bit by incorporating fruit in salads! ๐ฅ
This might seem a common sense for some of you but adding fruit to salads always felt strange for me and I'm so not used to it. ๐ณ
So starting it easy I made a recipe including just one fruit - orange - in salads. It is quite common to add orange in salads recipes and yet it is something different but not too stressful for tastebuds who are not used to this ๐ And it definitely encourages to eat those greens as they are not that boring anymore. ๐
If you feel like experimenting, feel free to add other or additional fruit to your salads - mango, strawberries, peaches, mellon or other! ๐๐
Rucola (arugula) salad with tofu and orange
You will need (1 portion):
โ 60 g. tofu
โ 30 g. rucola (arugula)
โ 40 g. uncooked couscous
โ 70 g. cucumber
โ Half of a medium orange
โ 1 small boiled beetroot (40 g.)
โ A pinch of salt
For the salad dressing:
โข 2-3 teaspoons of olive oil
โข 2 teaspoons of fresh lemon juice
Preparation:
Cut tofu into small cubes and cook in a pan on olive oil (1-2 teaspoons of oil) until golden. Add salt or other selected spices. I like to use prepared spices mixtures for chicken, steakes, etc.
Cook the couscous with a pinch of salt according to the instructions on the package. I usually just pour boiling water on it, leave it for a few minutes and it is done.
Cut cucumber, beet and orange into cubes / small pieces.
Mix the ingredients for the dressing in a separate bowl and set aside.
Put rucola salad, chopped vegetables and orange, boiled couscous and tofu in a bowl. Pour the sauce on top and, if desired, add a little more salt. The salad can be mixed or eaten layered like this.
Also seeds or nuts (hemp, pumpkin, walnuts, etc.) can be placed on top.
