For the first time, I’m trying something new at home: making a layered cake. This pandan-cheese layered cake looks so appetizing and keeps popping up on my social media feeds. I’m really curious about how it tastes and how to make it. I’ve always loved looking at rainbow cakes, and I’ve wanted to try making one—the colorful layers are absolutely beautiful.
I figured that before attempting a rainbow cake, I’d try making an easier version first—this pandan layer cake. It looks really simple, but it requires patience during the preparation process and, of course, the right steaming technique.
Each layer actually has the same flavor profile, but the middle layer has cheese added to it, and in my opinion, that layer is the highlight of this cake’s flavor. The combination of ingredients and the texture of this cake really has me hooked. So, let’s jump right into the recipe!
4 eggs
150 grams all-purpose flour
150 grams granulated sugar
30 grams cheddar cheese
100 ml liquid margarine
70 ml milk
1 teaspoon Emulsifier
Pandan paste, to taste
Brown food coloring, to taste
Step 1
Beat the eggs, granulated sugar, and baking powder until light, fluffy, and thick enough to leave a trail.
Step 2
Add the sifted all-purpose flour, then add the milk. Mix again until well combined.
Step 3
Next, divide the batter into 3 portions. Add grated cheese to one portion.
Step 4
To the other two portions, I added green food coloring to one, mixed the other with plenty of chocolate, and added just a little to the third to keep the color bright.
Step 5
Next, steam the main layer in a baking pan that has been greased with margarine and preheated.
Step 6
Steam for about 3 to 5 minutes, then add the white batter in the center and steam again until cooked through.
Step 7
Finally, add the bright green batter and steam until cooked through. Since the heat was a bit high, my cake didn’t turn out perfectly smooth—if any of you know of other possible causes, please share your insights with me.
Step 8
Once cooked, let it cool slightly before removing it from the pan, then slice the cake to your liking.
The cake turned out beautifully after being sliced, even though the steam caused a few bubbles on the surface—but that’s no big deal. It’s still delicious even if it’s not perfectly smooth; my first attempt wasn’t a failure. I just need to make a few adjustments going forward. I’m quite happy with the result—the texture and flavor are exactly what I wanted. However, the green color I mixed with a lot of brown looks too brown in the photo, but in reality, it’s greenish-brown.
The final result is amazing—the sweetness is just right, the texture is soft, and everything looks so perfect. I really love how each layer sticks together well; the cake is dense and incredibly moist—it doesn’t stick in my throat. I think this is the best steamed cake I’ve ever tried, and I’m so happy I was able to make it with such great results.
