Dragon fruit and egg pudding is a great idea for a simple snack at home. Especially for your kids who aren’t big on eating fruit, I think this pudding will be the perfect treat for your family.
Actually, I’ve made dragon fruit pudding many times before, but this one is different—the small pieces of egg mixed into the dragon fruit add a texture that makes this dessert more filling when enjoyed. Of course, it’s incredibly simple to make and offers a completely different experience from my previous puddings.
While I usually make dragon fruit pudding with coconut milk or regular milk, this time I just used sweetened condensed milk and dragon fruit juice—it brings out a vibrant color, and the egg patterns form naturally. This recipe makes 7 cups of pudding in fairly large molds. You can serve one pudding per person since the portions are quite generous. Curious about the steps? Let’s check out the recipe below.
1 egg
100 grams of dragon fruit
400 ml of water
50 ml of sweetened condensed milk
1 packet of jelly powder
2 tablespoons of granulated sugar
¼ teaspoon liquid vanilla
Cut the dragon fruit into small pieces, then blend until smooth.
Add it to a pot, bring to a boil, and stir in the jelly powder and granulated sugar.
Bring the mixture to a boil, then add the beaten eggs and liquid vanilla extract.
Add sweetened condensed milk, and Stir in the eggs until they form a beautiful pattern inside the mixture. Cook until fully set, then pour into molds of your choice.
Once the pudding has set, turn it out onto a serving plate and arrange it however you like. To help the pudding come out of the mold more easily, rinse the mold with water before using it.
The pudding has a beautiful, vibrant Fanta-pink color—it’s so rich and really brightens your mood when you eat it. The combination of milk makes this dish absolutely perfect. I was worried the eggs might make it taste fishy, but that concern was completely unfounded—it tastes amazing, fresh, and is truly a treat when served cold straight from the refrigerator.
