Eggplant sambal pecak is a fairly popular traditional dish. It’s a staple for those of us living in the countryside, where vegetables are plentiful. Plus, eggplants are easy to find locally; adding coconut milk and a simple blend of sambal spices makes this dish quite delicious.
Actually, this recipe sparked my curiosity after seeing a review by a food blogger on social media. So I made it at home, and the result was indeed delicious—it’s definitely worth trying at home. The ingredients are quite simple, and given the limited availability of ingredients and minimal use of them, I thought it would be just average, but to my surprise, the taste was truly that good.
2 purple eggplants
5 red chili peppers
6 bird’s eye chili peppers
1 roasted candlenut
1 teaspoon granulated sugar
¼ teaspoon salt
150 ml coconut milk
Roast the purple eggplant until fully cooked and it begins to turn brown.
Next, prepare the chili peppers, sugar, and salt, and grind them coarsely by hand in a mortar.
Add the candlenuts and grind again until everything is well combined. For the coconut milk, I bring it to a brief boil.
Mash the eggplant, and it’s ready to serve and enjoy. Once the coconut milk is hot, add it to the chili paste mixture, then add the eggplant.
Serve on a serving plate or directly in my old-fashioned mortar—my wooden mortar is very old, but trust me, it makes the food in my home taste even better at every stage of preparation.
Look at the result: the cooked eggplant is incredibly tender. The flavor is naturally savory and sweet with an extraordinary touch. In my opinion, this is a fantastic dish that’s perfect as a quick meal at home. I enjoy it with warm rice—it’s so delicious, especially with fried tempeh. This can easily become a go-to dish to replace any meal. So, for those of you who are unsure how to prepare eggplant, try this method—I’m sure you’ll love it.
