Rangi Cake
Kue rangi is one of the traditional snacks made from grated coconut. This snack is so easy to prepare that it can be found in many traditional markets.
Kue rangi originates from Betawi and is characterized by being enjoyed with thick palm sugar sauce, creating a complete rangi cake. With the savory taste of coconut and the combination of sweet palm sugar ingredients. As a lover of culinary and vegan food, of course I really like cakes like this, especially since this cake has a very unique shape and making process.

Ingredients Used
100 grams grated coconut
2 tablespoons tapioca flour
1 tablespoon granulated sugar
¼ teaspoon salt
Enough palm sugar sauce
Preparation Procedure
Combine the grated coconut with sugar
and salt and stir everything until evenly mixed.
Add tapioca flour and stir again until the coconut is evenly mixed.
After the dough is ready, bake it on a mold, don't forget to spread it with a little margarine or oil. Then bake on the mold.
Bake until brownish yellow or the bottom of the dough is perfectly cooked. Well baked with kexil heat for about 15 minutes.
Results and Suggestions Presentation
Serve the rangi cake on a plate neatly arranged then pour the palm sugar sauce over it. I prepared the gula aren sauce earlier yesterday and it's purely just long-cooked gula aren so it's thicker. I'm used to preparing this sauce on this platform. Now if you don't want to worry, you can buy ready-made palm sugar sauce which is usually sold in liquid packaging.
This rangi cake snack has a slightly crunchier texture on the bottom because it is baked until brownish yellow. On top, it has a soft texture with a sweet and very tasty sauce combo. The aroma of palm sugar is very fragrant, plus the aroma of toasted coconut is perfect.
The combination of all the ingredients is indeed very tasty, so authentic this Betawi specialty food makes me want to make it the next time.
