I want to share a recipe that I learned during my stay in the North of Spain and that I have adapted to my liking.

Ingredients for 4 people:

1 large octopus
4 medium potatoes
1 large onion
3 garlic cloves
1 bay leaf
1 paprika
1 tablespoon of olive oil
1 trickle of white wine
1 trickle of tomato juice
Parsley to taste.
Salt to taste.

Preparation:

Wash and chop the octopus into slices, then place it in a large pot with boiling water over high heat and a teaspoon of salt. Peel the potatoes and cut them into cubes, add the potatoes to the boiling water with the octopus when it has reached 15 minutes of cooking.

Finely chop the onion, garlic, paprika, and parsley and put them to fry in a pan with olive oil until golden brown. Once at this point add a splash of white wine, a trickle of tomato juice and a bay leaf. Stir until it boils for two minutes and then add to the pot with the octopus and potatoes.

Let cook everything together for 45 minutes over medium heat, stirring every 5 minutes and making sure that the octopus and potatoes are completely submerged in the water. Test before finalizing and correct the salt.
