French almond cake (Amandier)

The word Amandier means “almond tree” in French. Made with almond flour, eggs, butter and just a touch of citrus and finished with a bit of crunch from the sliced almonds on top, this French classic gets better with time.

We liked it even more when it was 3 days old. It's wonderful celebration of almonds, one of my favorite nuts!

Ingredients ​Zest of 1 orange ​¾ cup (150g) sugar ​5 large eggs, at room temperature ​2½ cups (250g) almond flour ​¼ tsp salt ​5½ tbsp (80g) unsalted butter, melted and cooled ​¼ cup (60g) crème fraiche (or Greek yogurt, skyr, or quark) ​1 tsp (5ml) almond extract ​1 oz. (30g) sliced almonds ​1 tbsp icing sugar, for serving

​Instructions ​Make an orange sugar: Rub together the sugar and orange zest with your fingers until the mixture is moist and fragrant. ​Mix the batter: Whisk the eggs and the orange sugar until they become foamy. Then, stir in the almond flour and salt. ​Add the melted butter and crème fraiche to the batter and mix until smooth. ​Stir in the almond extract. ​Pour the batter into a prepared 8-inch round springform pan (lined with parchment paper and lightly buttered). Smooth the top. ​Sprinkle the sliced almonds evenly over the top. ​Bake for 35–40 minutes at 350°F (180°C) until the top is golden and a toothpick inserted into the center comes out clean. ​Let the cake cool in the pan for 10 minutes before removing it from the springform. Cool completely before serving.
