For a baking pan measuring approximately 20x20 cm (8x8 inches):
White chocolate (high quality, with a high cocoa butter content) — 200 g (7 oz)
Unsalted butter (82.5% fat content) — 115 g (1/2 cup / 1 stick)
Brown sugar (preferably muscovado or dark brown for a rich caramel flavor) — 150 g (approx. 3/4 cup, or you can mix it 50/50 with regular white sugar)
Chicken eggs (room temperature) — 2 large (or 2 medium + 1 egg yolk for a denser texture)
Vanilla extract — 1 tsp (or a packet of vanilla sugar)
All-purpose flour — 150 g (approx. 1 1/4 cups)
Salt — 1/4 tsp (essential to balance the sweetness)
Optional: A handful of toasted nuts (pecans or macadamia) or freeze-dried raspberries for a touch of tartness.
Step-by-Step Preparation

Pre-heat your oven to 165°C (325°F).
Line a square baking pan with parchment paper, leaving a bit of overhang on the sides—this will make it much easier to lift the finished brownies out.
Step 2. Melting Chocolate and Butter
Break the white chocolate into small pieces and place them into a heatproof bowl.
Add the cubed butter.
Melt the mixture using a double boiler or in the microwave in 15–20 second intervals, stirring thoroughly after each interval to prevent the white chocolate from overheating and seizing.
Stir until completely smooth, glossy, and uniform. Let it cool down to a comfortable, lukewarm state.
Step 3. Whipping Eggs and Sugar
In a separate deep bowl, combine the eggs, brown sugar, vanilla extract, and salt.
Beat with a mixer or whisk on medium speed for 3–4 minutes. The mixture should lighten in color, increase in volume, and become fluffy.
Step 4. Combining Ingredients
Pour the cooled butter-and-chocolate mixture into the whipped eggs and sugar. Gently fold together using a silicone spatula from the bottom up.
Sift in the all-purpose flour. Gently fold the flour into the batter just until no dry lumps remain. Note: Avoid overmixing to keep the baked goods from becoming rubbery.
At this point, you can fold in the chopped nuts or berries if you choose to use them.
Step 5. Baking
Pour the batter into the prepared baking pan and smooth the top with a spatula.
Bake at 165°C (325°F) for about 20–25 minutes.
Tip: White chocolate caramelizes faster than dark chocolate, so keep an eye on the color. The edges should set and turn golden, while the center should remain slightly soft and jiggle a little when the pan is gently shaken. A toothpick inserted into the center should come out with moist crumbs, but not wet batter.
Step 6. Chilling (The Most Important Step)
Remove the pan from the oven and let the brownies cool completely right inside the pan.
Next, place the pan in the refrigerator for at least 2–3 hours (preferably overnight). Chilling stabilizes the structure, making it dense, creamy, and achieving that signature "chewy" texture characteristic of a proper brownie.
Cut into square portions using a decorating knife before serving. Garnish with fresh raspberries or drizzle with a berry coulis if desired.
