Hi bloggers and food lovers! Today I’m making some fluffy, jiggly pancakes, they have a soft texture and a sweet taste, and they’re easy to make. You can top them with whatever you like. This time, I’m making fluffy pancakes topped with ice cream. Okay, let’s get started!

Ingredients:

  • 2 eggs
  • 3 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cream of tartar
  • 3 tbsp all-purpose flour
  • 1 tbsp cornstarch
  • 1/2 tsp baking powder
  • 7 tbsp milk
  • vanilla ice cream for topping

Instructions:

  • Crack 2 eggs and separate the whites from the yolks

  • Add the vanilla extract and milk

  • Whisk the egg yolks until pale

  • Add the all-purpose flour, cornstarch, and baking powder to the egg yolks

  • Stir until well combined and a batter forms

  • Set aside

  • Take a bowl containing the egg whites, then add cream of tartar and 1 tbsp sugar

  • Beat the egg whites with mixer on high speed

  • While beating, gradually add the sugar until the egg whites form soft peaks

  • Gently fold a small amount of the egg whites into the yolk batter

  • Fold the batter until well combined

  • Add the egg white and yolk mixture to the remaining egg whites

  • Gently fold the mixture again

  • Once thoroughly combined, transfer the pancake batter to a piping bag

  • Heat a pan and lightly grease it with oil

  • Pipe the pancake batter onto the pan and add a little water around the edges of the pancake

  • Cook the pancake over the lowest heat setting

  • Continue until all the batter is used up

  • Once all the batter is used up, top the fluffy pancakes with vanilla ice cream and sprinkle matcha powder on top

  • The fluffy pancakes are ready to eat
