If you want an easy, healthy cookie, do the following:
Cook a small or medium-sized sweet potato with the skin on, until it is soft.
Put the cooked sweet potato in cold water to be able to remove the skin.
Mash up the sweet potato. Add: vanilla essence, coconut oil (2 tablespoons, for example,) coconut sugar, some salt, cocoa powder, spelt flour. Get it to cookie consistency and bake it into the form of several cookies.
These cookies have a wonderful consistency baked, are healthy and are as easy as pie while remaining 100% cookie.
