Hi bloggers and community members, have a great weekend! Do you guys like anything with cinnamon? My mom and I are the biggest cinnamon fans in our house. The scent of cinnamon is so calming I love it, this time I made some crispy and sweet cinnamon cookies. The ingredients I used this time are pretty simple and vegan-friendly since I used margarine made from plant-based fats. After the cookie dough is made, I rolled it in granulated sugar to add some texture. Okay, let’s get right to it!
Ingredients:
Cookies:
- 100 grams margarine
- 2 tbsp powdered sugar (to taste)
- 1 tsp ground cinnamon
- 130 grams all-purpose flour
Filling:
- 2 tbsp melted margarine
- 1 tbsp ground cinnamon
- 1 tbsp granulated sugar
Instructions:
Place the room-temperature margarine in a bowl, then add the powdered sugar and mix until well combined and the texture is smooth. Next, add the ground cinnamon, then add the all-purpose flour to the bowl and mix all the ingredients together until a soft, non-dry dough forms.
Once the dough is ready, melt a spoonful of margarine and let it cool. In a small bowl, combine the ground cinnamon and granulated sugar for the filling, then mix until well combined.
Next, take the soft, non-dry dough and roll it out until it’s flat and wide like this. Then, brush the top with the melted margarine.
Then, brush melted margarine over the top and sprinkle a mixture of cinnamon and sugar over the cookie dough. Once the dough is evenly coated with the cinnamon and sugar mixture, roll it up.
Next, sprinkle the outside of the dough with granulated sugar to add texture when baked, then let the dough rest in the freezer for 5 minutes so it’s easier to cut into pieces.
After removing it from the freezer, divide the dough into several pieces. Place the cookie dough pieces on a baking sheet greased with margarine, then place them in a preheated oven for 10 minutes. Bake the cookies at 200°C for about 50 minutes until they’re cooked through and crisp.
Let the cookies cool, and your crispy cinnamon roll cookies are ready to enjoy.
