Feel like want to eat something different tonight? My choice is to go with Chinese food. I went to Texas awhile ago to visit my husband's family, and his aunt cooked me this similar dish. The difference was, she used scallop and I use tofu. That's the only Ingredient I have at home. It turns out well and delicious.
My own original recipe.
Prep Time: 5 minutes / Cook Time 20 minutes
Ingredients:
12-15 dried shiitake mushroom or fresh-soak (if you are using dried one) in cold water until soft
6 fried tofu
8 bok choi-wash and cut halves
1 1/4 cup chicken broth
1 cup water from shiitake mushroom
2 cloves garlic- crush them lightly with the flat of a knife
2 sliced of fresh ginger
2 tbsp of low sodium soy sauce
1 1/2 tbsp oyster sauce
1 tbsp olive oil or cooking oil
Pinch of salt
To thicken the sauce:
1/4 cup chicken broth
1 tbsp of cornstarch
Method:
Heat 1 tbsp of oil over medium heat in a medium wok, add crushed garlic and ginger and saute until it's fragrant. Add the mushroom, tofu, mushroom water and the chicken broth (except for another 1/4 cup)
Let it boil and add all the seasoning. Cover and let it simmer over medium heat until the sauce is reduced, then turn down the heat to medium low. Add the bok choi and cook it for 1 to two minutes or until it's cook but still crunchy.
In a small bowl, mix the cornstarch with 1/4 cup of chicken broth then mix it well into the wok until the juice thickens.
Turn off the heat and serve.
