Today I will be sharing with you my personal Oven Baked Fish Patties recipe. The reason why I am sharing this today is that yesterday my roommates made fish and we had some fish leftover and today we didn't really know what to do with it so I said let me try out making a post about my favorite fish patties. These are great to eat with veggies and baked potatoes.
Ingredients
300 grams granulated Fish, Tuna or Salmon
4 Garlic Cloves
1 Red Onion
1/2 Bell Pepper
2 Shredded Carrots
2 tsp Salt
2 Eggs
1 cup Bread crumbs
1 tsp Black Pepper
1 Lemon
Ginger to taste (optional)
Start by granulating your fish by hand or by food processor, enough for it to stay like when you get tuna out of a can. In here you can add 2 tsp salt, 1 tsp black pepper and press 1 lemon.
Now in a separated bowl we will start cutting the veggies that will go into these patties. For this we will need 4 minced garlic cloves, 1 diced red onion, 1/2 diced bell pepper, and 2 shredded carrots. If you are good with the knife you can go ahead and cut them by hand or if not you can a food processor but do not do it so fine it becomes a paste.
Now we are gonna fry our chopped up veggies in some olive oil or butter. Leave it to fry on low heat for about 10mins and leave cool aside after.
Now that our veggies are cooled, we are gonna mix them into our granulated fish. Here we will add 2 Eggs and 1 cup of bread crumb or you can use crackers as well and we will mix these all up until it becomes into a paste form.
Now you roll or scoop this paste into little balls and you flat them a bit and decide on your own if you prefer frying them or baking them. I prefer baking mines so I preheated my oven at 120c and after a few minutes I popped these in the oven for 15 mins on each side.
