For some reason blackberries seem to be quite cheap these days. I found them for 50 cents per packet in the international grocery store. I grabbed 4 packets. I should have gotten the entire box for goodness sake. What was I thinking?
I love fruit cobblers of any kind. Warm and gooey fruit filling and crusty biscuit with vanilla ice cream? That's my kind of heaven. Traditional cobbler recipes call for making biscuit dough separately. This recipe doesn't need that. You can whip up both fruit filling and the biscuit part right in the baking pan and voila~! You've got a cobbler. This recipe is so easy, any novice in baking can make this. Foolproof for baking dummies.
Some might say this look similar to clafoutis, the French dessert. It is, but then I will call this clafoutis of American south; very southern way of enjoying easy version of cobbler.
3 pint blackberries
2 teaspoon corn starch
6 tablespoons butter
1 cup all purpose flour
3/4 cup + 2 tablespoon sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
Preheat oven to 375˚F. Melt butter in the oven as you preheat.
Mix blackberries with corn starch.
To make batter, mix flour, 3/4 cups sugar, baking powder, salt, milk, and vanilla in a bowl. Pour over to the melted butter. DO NOT STIR! Unless you want a pancake.
Drop berries over the batter. Bake for 35 minutes.
Take out the pan and sprinkle the extra 2 tablespoons of sugar on top.
All done~!
You gotta serve with cold vanilla ice cream. That's the beauty of any cobbler.
