This recipe is versatile - play around with different fruits and spices. I keep forgetting to buy raisins. I love oats, raisins and bananas together so if I had some I would have added some into the mixture before baking.
1 tbs oat flour
3 tbs rolled oats
2 tsp corn starch / arrowroot starch
½ tsp baking powder
1 tsp xylitol
½ tsp cinnamon
1 small banana, mashed
1-2 tbs apple sauce
3-4 tbs frozen/fresh blueberries
optional: a few slices of banana and shards of dark chocolate for the top
Preheat oven to 375F.
In a bowl, mix the dry ingredients. Add in the apple sauce and mashed banana and mix again. Stir in the blueberries.
Spread mixture onto a parchment paper-lined baking sheet and bake for around 15-17 minutes. Broil the last 2-3 minutes (optional step – helps to crisp out the outer layer).
Remove from oven and carefully peel off sheet and enjoy warm, room-temperature or after it has cooled in the fridge.
