Sweet Bacon Party Poppers
Collins' garden jalapenos are growing crazy! Can you see how many are in these picture?!
With so many peppers, of course I made poppers last night! These are incredibly easy and make a great appetizer or snack. Here's my recipe...
6-8 large fresh jalapenos OR 1 26oz can whole jalapeno peppers drained.
8 oz cream cheese
1 lb sliced bacon
2 cups of packed brown sugar
Cut off the stem end, cut pepper in half, and scoop the seeds from the jalapeno pepper.
Cut the cream cheese into thin 'logs'. Pack the jalapeno half with cream cheese, allowing the cream cheese to extend slightly from the end of the pepper.
Wrap each stuffed pepper evenly with a slice of bacon and arrange in a baking dish. Cover evenly with brown sugar.
Bake covered at 400 for 40-45 minutes or until bacon is well cooked. Watch out, they are EXTREMELY hot when pulled out of the oven. Serve warm.
