No, I am not Peter Piper, but I do have lots of peppers in my garden. When you have way too many peppers to consume at once you have a few choices. One you can roast them and freeze then. I do that frequently with green chili. But with jalapenos and shishito peppers I tend to pickle them. I don't use canning or processing, just a basic pickling recipe. The pickled peppers are good for a few months in the fridge. If you actually process them and can them they can last much, much longer on the shelf, but I find it makes the peppers mushy. Unless you add calcium chloride to prevent it, but I've never done that to be honest.
For my shishito peppers I cut them up, added in some garlic and black peppercorns to add some flavor. These peppers are mild, only one in ten has any real heat to them. For jalapenos I usually just go straight with peppers, no garlic or peppercorns as they have a nice kick already.
These came off of several plants in my garden, a mix in a bowl of both types:

Next up to pickle them up. To do this quick pickling method, I use a basic recipe of vinegar, water, and sea salt. For vinegar, I usually use a combination of white vinegar mixed wit a little apple cider vinegar for extra flavor. The basic recipe is as follows:
Vinegar: 1 cup (237 ml)
Water: 1 cup (237 ml)
Salt: 1 tablespoon (18 mg)
First you boil the ingredients, and pour the boiling solution to completely immerse the peppers. You can up the recipe depending on how much you have to pickle, in my case it took 12 cups of total solution to fill the bottles. They came out nicely!
