Cocinar es una de las actividades que me ha permitido relajarme durante los últimos días, y hoy quise hacer un budín de limón. Busqué una receta y cambié algunas cantidades porque cuando la mezcla estuvo lista según la receta que usé, sentí que estaba muy dulce, así que agregué media taza más de harina y un huevo extra.
Me gustó el resultado con un punto justo de dulzor, aunque no tuvo una miga tan liviana; me parece un postre excelente para acompañar con una bebida caliente. La próxima intentaré seguir la receta original (lol) para ver si queda muy dulce. Hoy les presento mi versión.

Cooking is one of the activities that has helped me relax over the last few days, and today I wanted to make a lemon pudding. I looked up a recipe and adjusted some of the measurements because, once the mixture was ready according to the recipe I used, it seemed too sweet to me, so I added half a cup more flour and an extra egg.
I liked the result—it had just the right amount of sweetness, although the texture wasn’t quite as light as I’d hoped; I think it’s an excellent dessert to enjoy with a hot drink. Next time, I’ll try following the original recipe (lol) to see if it turns out too sweet. Today I’m sharing my version with you.

Icing
I added the lemon zest to the sugar to infuse it with flavor and give it a stronger citrus taste.
I added lemon juice to the milk to curdle it; this gives the cake a “buttermilk” flavor.
I beat the eggs, sugar, and oil until the mixture was frothy; then I added the sifted flour and milk, alternating between the two, and finished with the flour.
I placed it in a baking pan and baked it in a preheated oven at 180 degrees Celsius for forty minutes. Remember that baking time may vary depending on your oven.

When it came out of the oven, I drizzled it with the lemon glaze I made by mixing sifted powdered sugar with a few drops of lemon juice until I reached the desired consistency.
