Hello foodies, happy day! How’s everything going? Over here, I haven’t been feeling very well, which is why you haven’t seen me around for the last two days, but even though I’m still not feeling great, I can’t go too long without writing to you, so here I am to share the recipe for a delicious lemon bundt cake with cream that I made to spoil my husband for his birthday.
I'm sure this lemon bundt cake with cream will become one of your favorite recipes because it's seriously delicious. The secret lies in the combination of margarine and oil, which creates an incredibly moist and light crumb that melts in your mouth.
Every bite perfectly balances the citrusy zest of the lemon with the sweetness of the creamy condensed milk frosting that drips in perfect droplets down its curves, and for the finishing touch, I added lemon zest, which definitely gave this dessert an incredible extra kick. And in case you’re craving it at home, here’s the recipe.
300 gramos de harina de trigo leudante
½ cucharadita de bicarbonato de sodio
½ cucharadita de sal
200 gramos de margarina
60 mililitros de aceite (¼ taza)
300 gramos de azúcar
3 huevos grandes
2 cucharadas de ralladura de limón
60 ml de zumo de limón
1 taza de leche
200 grs de leche condensada
3 cucharadas de jugo de limón
Ingredients
For the lemon cake
300 grams of self-rising flour
½ teaspoon of baking soda
½ teaspoon of salt
200 grams of margarine
60 milliliters of oil (¼ cup)
300 grams of sugar
3 large eggs
2 tablespoons of lemon zest
60 ml of lemon juice
1 cup of milkLemon Glaze
200 grams of condensed milk
3 tablespoons of lemon juice
The first thing we'll do is cream the margarine and sugar together. To do this, we'll add them to the bowl and beat on medium-high speed until the mixture is creamy and the margarine changes color.
Next, reduce the speed of the mixer to the lowest setting and slowly drizzle in the oil. Once all the oil has been incorporated, add the egg yolks one at a time, followed by the lemon zest and juice, and beat for two more minutes to ensure everything is well combined.
At this point, the next step is to add the dry ingredients. To do this, sift the flour, baking soda, and salt into a bowl. Next, add them to the margarine and egg mixture in three batches, alternating each batch with a little milk, and folding them in with a spatula without overmixing.
Once this mixture is ready, we beat the egg whites until stiff peaks form and gently fold them into the mixture in three batches until everything is thoroughly combined.
The next step is to pour the batter into a bundt pan that has been thoroughly buttered and floured, and bake at 180 °C for about 30 to 45 minutes, or until a toothpick or skewer inserted into the cake comes out completely clean.
Remove from the oven, let it rest for 10 minutes, turn it out of the pan, and you’re done. Now all that’s left is to let it cool completely before glazing.
In a bowl, mix the condensed milk with the lemon juice and zest, whisk by hand for a few minutes, and refrigerate until it thickens. Once it has thickened, pour the mixture over your bundt cake—which should be completely cool—and enjoy!
The result? A dessert that’s not only beautiful but also absolutely delicious! It’s the perfect combination of citrus and sweetness, with an incredible light, fluffy texture and moistness—and honestly, you have to try making it at home, because there aren’t enough words to describe just how delicious it is. So, let’s get started!
