Canadian winters call for warm food that is both filling and nourishing. For me, it also has to be tasty, affordable, and simple to make. Baked veggies fits the bill! It warms both the kitchen, and the belly!

Directions: Chop 6 potatoes, 2 tomatoes, and an onion into bite-sized pieces. (Peppers, garlic, carrots, and others could be added. I included sliced up vegan sausages.) Toss with olive oil and seasonings on a baking sheet, roasting pan, or casserole dish. Bake at 400oF for 45 minutes, stirring once or twice.
You can swap out any of the choices for others, and you can season it to your tastes. If you've got an hour, this is an easy way to turn a few items in your fridge/cellar into a professional, delicious, and healthy - but comforting - meal.
Some people might think it's odd, but personally, I wouldn't cook this without the tomatoes! Cherry tomatoes right out of the back yard are amazing this way. They donate most of their water, keeping the potatoes moist as they bake. The tomatoes end up delicious and sweet, balancing out the dish.
We have to do what we can to enjoy these dark times, especially December and January in Northern countries like Canada! Enjoy your family, stay warm... and eat your veggies!
