Frozen Chocholate Mousse Praline Hazelnut With Strawberry Sauce
Ingredients
30 grams Butter
185 grams Dark Cooking Chocolate
3 Eggs
65 grams Castor Sugar
2 tablespoon Coffee, Dissolve with a little Water
125 ml Dairy Cream
Praline Hazelnut
65 grams Sugar
40 grams Rousted Hazelnut, chopped
1 tablespoon Water
Strawberry Sauce
250 grams Fresh Strawberry
1 tablespoon Sugar
1 tablespoon Dairy Cream
Making Steps
Praline Hazelnut: Mix Sugar and Water in a saucepan, stir over low heat without boiling just until Sugar is dissolved, high the heat, bring to a boil, uncovered and without stirring until lightly golden brown. Add chopped Hazelnuts and pour into the pan, let it harden and then chop finely.
Strawberry Sauce: Blend Strawberry and Sugar into a Blender machine, strain and mix with Dairy Cream.
Chocolate Mousse: Mix Hot Melted Butter and Dark Cooking Chocolate in a bowl, stir it well, cooling down, not to harden, set aside.
Mix Eggs and Sugar with mixer until thick and soft, add the Chocolate dough, Liquid Coffee , Praline and Whipped Cream.
Pour the Mousse into 6 pieces mold volume 85 ml, enter into a freezer and freeze several hours to harden.
Serve with Vanilla Ice Cream, Strawberry Sauce and Sprinkle with Praline.
