ENGLISH.

I greet you once again dear vegan community, I hope and you are doing very well. 😊

One of my favorite dishes as a child was Lentils, my mom prepared them delicious and I think everyone at home really enjoyed that dish despite being so common, simple and economical, but I have understood that the value of a recipe is in what you bring to it, in doing it with love and putting that seasoning and energy that makes each dish unique.

This recipe has an ingredient that for me has always been somewhat difficult to digest and it is the pumpkin but combined with Lentils I love it, well I think my mother managed to make sure we were well fed and at the same time we enjoyed her food, I thank God for having a mom with such good seasoning and that now I can continue with her great legacy of good food, made with desire and love. 💕

Here is my recipe, please join me!

Ingredients:

  • 1 Cup of Lentils.
  • Half of a small Auyama (the one I like, it has the shape of a pear).
  • 1 Jojoto or Elote.
  • Half a small bell pepper.
  • 2 sweet chili peppers.
  • Half a small onion.
  • 3 Garlic.
  • Olive or Vegetable Oil for frying.
  • 1 teaspoon of cumin.
  • Salt to taste (I added 2 teaspoons).
  • Cilantro, a sprig, for garnish (optional).

Preparation:

Well after having washed all the vegetables very well, I start to do what I find most tedious of this recipe and that is to chop and peel the Auyama, since this one I chose I really like its flavor but the shell is hard, so I do not leave the shell is better to remove it, and clean it very well of the seeds.

Then I set out to wash the Lentils very well, and set them aside.

Now it is the turn for the Jojoto or Elote that was previously washed, cut it in 5 parts, each one cut it in the size that he/she likes. Set aside.

We are ready to cut all our vegetables to make the sofrito, we chop very small, the onion, the paprika, and the sweet chili peppers.

We assemble the pot where we are going to make our recipe in the kitchen, we put to heat with a drizzle of oil and there we are going to fry the onion, along with the paprika and chili.

We put to fry over low heat, and then we put the garlic also chopped very small, mix all the seasonings very well, and let it fry for a couple of minutes.

While the sofrito is cooking, heat another pot with water, we are going to use it to add to the lentils, it has to be enough water calculating that it will cover the lentils.

Now we go back to our sofrito and it's time to add the Lentils, mix very well, use moderate heat.

Approximately one minute later we add the Jojoto or Elote, continue mixing.

Add a teaspoon of cumin.

Next we add the water that we had previously put to heat.

We cover the pot where we are cooking the Lentils, trying that it is not totally closed and we put to cook to high fire, until it begins to boil, while we wait that the lentils boil we continue to the following step.

Now we cut the Auyama in big pieces, since we are going to blend it later.

When the lentils start to boil, add the pieces of Auyama.

After more or less 10 minutes we verify how the Auyama is, if it is already soft we take it out of the pot with a little bit of broth, we let it rest for a few minutes.

While the Auyama is resting we add the salt to the lentils that now we will leave cooking over low heat.

Once the Auyama has rested, proceed to liquefy, if you think it lacks some liquid, add a little water, but make sure that the cream is thick.

Now add the Auyama cream to the Lentils that we are still cooking over low heat, mix very well, and let it cook for about 5 more minutes, at this time rectify to see if it needs more salt.

Ready, now serve.

We can decorate with some chopped Cilantro.

Now let's enjoy this delicious and nutritious creamy lentil soup.

Until a new opportunity, Blessings! 🙏🤗
