Recipe Post - Quick, Easy and Tasty Brazilian Carrot Cake!!
So this was among the first few cake pictures I posted on Steemit. I would love to share the recipe for the same. This is a super easy cake to make with no fancy equipment required. Please make sure you have a blender and an oven though.

So here goes the recipe for Brazilian Carrot cake with Chocolate Ganache topping:
Ingredients:
250ml vegetable oil
400g caster sugar
4 large eggs
3 medium carrots, peeled and sliced
300g plain flour
1 tablespoon baking powder
For Ganache
100gm Dark chocolate(cooking Chocolate)
50ml Fresh Cream
Method for the Carrot cake:
Preheat oven to 180 C / Gas 4. Grease and flour a medium size cake tin (20x30cm). You need to Preheat for a minimum time of ten minutes so that the oven is heated enough. Do this at the very beginning so that by the time your batter is ready, your oven is ready too.
In a blender or food processor combine the oil, sugar, carrots and eggs. Blend until smooth. It needs to look like thick soup post blending.
Pour carrot mixture into a bowl and sift in the flour and baking powder. You need to sift your ingredients to avoid lumps. Mix well with a large wooden spoon or spatula. Pour the cake mixture into the prepared cake tin.
Bake in the preheated oven for 40 minutes. Let cool, remove from tin and frost.
Method for Chocolate Ganache
(I use the microwave for this. If you require the gas method then do mention in the comments below)
Finely chop the chocolates and add them to a microwave safe bowl.
Pour the cream on top and mix well.
Heat in the microwave for ten seconds, remove it, mix it and pop it back to the microwave. At the interval of every ten second keep mixing it till you see no more lumps. Be very careful here as there are chances of the chocolate burning. Mixing at intervals is very important but do not over mix.
Pour this over the cooled cake and enjoy. This recipe serves 8 people, but I doubt you would want to share it.
