In a large bowl, combine pear slices, brown sugar, cornstarch, lemon juice and cinnamon. Add figs and mix gently. Reserve.
Between two sheets of waxed paper or parchment paper, roll the marzipan into a 9" (21 cm) circle. On a sheet of parchment paper, roll the pastry into a 16" (40 cm) circle. Place the dough with the paper on a large baking sheet. Place the marzipan in the centre of the dough. Cover with reserved fruit filling. Fold the dough edge inward to make an 11" (28 cm) diameter pie. Sprinkle with almonds.
In a small bowl, combine egg and water. Brush the dough with this mixture, then sprinkle with granulated sugar. Bake in preheated 375ºF (190ºC) oven 50 to 60 minutes or until golden. Let cool on a wire rack. Baste honey (The pie will keep overnight at room temperature and up to 1 month in the freezer.)
