Two weeks ago, I went to the Apple Farm and bought a bushel of apples to make sauce and store enough for the freezer to make our favorite "Apple Bread".

Apple Bread

Dice:

2 cups apples (3 large apples, peeled and cored)

Cream together:

1 cup vegetable oil
3 eggs
2 cups of sugar
2 Tablespoons of Vanilla Extract

Sift together:

3 cups of flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1/2-1 teaspoon of cinnamon

Blend everything well and add the apples. Pour into 2 large, lightly oiled or parchment-lined loaf pans or 4 small ones.

Bake @ 350°F. For 45-50 minutes or until a toothpick comes out clean when inserted into the middle of the bread.

Can you almost smell the delicious aroma wafting through my kitchen? Hubby is standing by waiting for it to cool, lol.

Freezing:

Before dicing up apples to freeze, I mixed lemon juice with water in a bowl to keep them from turning brown.

Then I peeled and cored the apples, diced them into small chunks, and put them in the lemon water. Once I was finished, I drained the apples, then placed them onto a parchment-lined baking tray.

They are ready for the freezer.

The following morning, I vacuum-sealed 2 cups into each bag. This is the exact amount needed in the recipe.

If I remember correctly, I got 8 bags from that tray. It will be delightful having them on hand to make the bread this winter season.
