One of the foods that I think is everywhere and uniquely has its own characteristics in every country is 'Pancake'. I can guarantee that this is a food that you can find anywhere, especially in each region has its own characteristics.
The meaning of pancake is flour that is processed and baked on a pan. Usually there are toppings such as maple syrup, chocolate and various kinds. The point of this food is usually an easy and simple breakfast snack. Especially accompanied by coffee! that's the best.
It turns out that pancakes also exist in Indonesia with their own characteristics. Some say that this food comes from West Sumatra, so it is called 'Serabi Minang', some also say Classic Serabi. Whatever the name, this is still a pancake with a traditional taste.
Why traditional? Of course because the culture of making serabi itself is quite different even though the results are almost similar to the pancakes that we usually know, the difference is, this classic pancake has a soft and fatty characteristic from a mixture of yeast and coconut milk. Wait, I'll explain it to you!
Classic Serabi Ingredients:
- 1 kg of medium protein wheat flour
- 1 pack (10 gr instant yeast)
- 2 liters of coconut milk
- 250 gr palm sugar
- Pandan leaves
- Pinch of salt
Quite simple ingredients, right?
How To Make Classic Serabi:
- The first step in making classic serabi is to make coconut milk. I bought about 1 kg of grated coconut, this will produce a lot of coconut milk, about 2 liters of thick coconut milk. This time I plan to make serabi in large quantities.
- The flour is mixed with yeast, then 2 liters of dissolved coconut milk are added. Add a little sugar to activate the yeast quickly and make the dough rise. Let the dough rise for at least 1 hour and cover with a damp cloth.
- I mix the other coconut milk with cornstarch and palm sugar, cook over low heat and add pandan leaves to give off a delicious aroma. The resulting sauce will be slightly thick and sweet. Don't forget to add salt too because it will make the sweet taste better.
- The serabi dough is baked on a pan like this, smeared with a little oil if you are going to add dough. Bake until cooked and hollow. After that, serve while warm!
