Ingredients.
- 400 grams of beef (thinly sliced).
- 100 grams bean sprout.
- 1 cucumber (julienned with a mandoline).
- 1 small carrot (julienned with a mandoline).
- 20 shallot (thinly sliced) - for fried onion.
- 100 grams of roasted peanut.
- 4 cloves of garlic (finely chopped - divided in 2 parts).
- 2 lemongrass (finely chopped).
- Chilli (finely chopped).
- Lettuce (sliced into 1 inch), coriander.
- Salt, black pepper, sugar, vegetable oil, oyster sauce.
- Rice noodles or dried rice noodles.
Instructions.
- Soak the beef with 1 teaspoon oyster sauce, 1 part of garlic, lemongrass, 1 teaspoon black pepper, 2 teaspoons salt, 1 teaspoons sugar, 1 tablespoon vegetable oil. Mix well at least 15 minutes. The beef can soak up and flavor.
- Heat vegetable oil in the pan, add garlic and fry until fragrant, add the beef and quickly stir-fry over high heat. Stir-fry until well done. Add salt to taste.
- Mix well the carrot and cucumber with 1 tablespoon sugar and 1 tablespoon vinegar for about 15 minutes until soak up.
- Fried onion: Heat 1/4 cup of vegetable oil in the pan over medium low heat. Add shallot and fry well until golden brown. Then remove the shallot and mix it with 1 teaspoon sugar. The shallot can crispness (optional).
- Prepare the dipping sauce: Mix well 4 tablespoons fish sauce, 4 tablespoons sugar, 20 tablespoons boiled cool water until the sugar is dissolved. Then add chilli.
- Arrange the rice noodles at the bottom of the large bowl, add beef, carrot, cucumber, bean sprout, fried shallot, peanut on top. Serve with dipping sauce and mix well.
- If you using dried rice noodles: Bring a large pot of water to boil, soak rice noodles, stiriing until softened, usually about 6 minutes. Drain and rinse with cool boiled water.
