These are perfect for summer/fall! I made these for the first time a few years ago and they're too good not to share.

You will need:

  • 2 medium zucchini(shredded)
  • salt
  • 1 Tbs butter
  • 1/2 onion(chopped)
  • 1 clove of garlic(chopped)
  • 2 ears of corn(cut off kernels)
  • 1/2 cup of yellow cornmeal
  • 1/2 cup flour
  • 1/4 tsp baking soda
  • ground pepper
  • 3/4 cup buttermilk
  • 1 egg
  • oil for frying

First, shred your zucchini and add 1/2 tsp of salt into a bowl...let this mixture stand for 10 min. and after squeeze out all of the excess water.

Then, heat butter in a skillet, add onion and garlic until soft. Add corn until crisp, about 3 more minutes. Set aside.

Combine cornmeal, flour, baking soda, 3/4 tsp salt, & 1/4 tsp pepper. Mix buttermilk and egg in a separate bowl, then add the corn-onion mix and zucchini. Then add cornmeal mix to that.

Heat up a skillet with just enough oil to fry the fritters. Scoop 1/4 cupfuls of the batter onto the skillet and push down to flatten. Cook on each side about 3-4 minutes or until golden brown. Use a paper towel to lay them on when done cooking to get excess oil off. Finally, sprinkle some salt on top!

Tips:
*Add extra cornmeal if batter is too thin and falling apart.
*I just use vegetable oil.
*Fritters can always be made and heated up later at 375 degrees F.
*Serve with sour cream!
