There is no better way to refresh your body in the middle of a hot summer day than having a cool fresh cup of ice milk tea. Have you drink ever blue pea flower milk tea before? Pearls blue pea flower are kind of like small, gummy candies that are made of mostly tapioca, they have blue color.

Tapioca pearls are easy to find in the regular Asian grocery stores or supermarket but I prefer to cook it by myself.. And today I’m going to share my no-fail method for preparing milk tea blue pea flower pearls at home, it’s super simple! Homemade is almost always healthier as you have complete control over ingredients going into your drink, and the quantities of each. If we buy milk tea at a restaurant, we will not know it's dirty or clean.
Boil the flowers until the blue color of the flowers is visible, filter the blue juice.
Cut the coconut into small squares.
Roll the tapioca into long snakes of dough, cut them into small pieces and roll them into tiny balls. Add coconut in the center of the dough and shape into balls.
Add coconut tapioca pearls into boilling water and continue to boil on low heat for about 15-20 mins.. Tapioca pearls will rise to the surface as they cook. Make sure you stir occasionally so the tapioca pearls don’t stick together.
Drain the tapioca pearls and place in a bowl. Pour the pearls into ice water to make the pearls crispy and have a nicer color. After 15 mins drain again, add sugar, adjust according to taste.
Soak the tea in boiling water for about 15 minutes or until the tea expands. Strain through a fine mesh strainer and cool. Mix fresh milk with tea, add sugar. Stir the mixture well, add the pearls on top.
Serve chilled with ice, it’s a light, refreshing beverage for the hot summer days to come!
