I have been doing sweet Arepas for days. The point is that I do not follow the original recipe for lack of ingredients. Basically, I spilled sugar the water plus the flour and that's it.

Original recipe
Ingredients for the paper mousse: (here nobody would think to say "melado", it sounds too snobbish)
1 cup of brown paper (panela, piloncillo, raspadura, panocha, chancaca) grated. Also get in powder
1/4 cup of water
Ingredients for the arepitas:
1 cup of flour PAN (precooked cornmeal)
1/4 cup wheat flour
1 pinch of salt
1/2 cup of paper molasses
1/2 cup of water (a little more if needed)
2 Tbs. of sweet anise seeds
Neutral flavor vegetable oil for frying
Instructions for melao
Melt the foil and water in a small pot, let it thicken a little and remove from heat (there should be more liquid than honey, more like maple syrup). Let cool

In a bowl mix the flour, anise and the pinch of salt. Create a hole in the center and add the melao and water. Mix well with a fork or by hand and let the dough rest for 5 minutes to absorb the liquids well.
Knead with the hand to integrate well, if the dough is too dry add a little water, the dough should be malleable, soft and easy to manipulate (uff! I had not noticed how difficult it is to explain this consistency to anyone who has never made arepas)
Make small balls with dough and crush with your hand or on a surface (I cover them with plastic so they do not stick). To make them very thin they can also be helped with a rolling pin, a glass or a bottle, passing it very gently on the dough. The arepitas must have a thickness between 5 and 7 mm
If you are foolish like me, you can use a cup or glass to cut round arepas, so they will all be the same size and shape.
Fry in hot oil bathing them again and again with the skimmer until they are inflated, turn to brown on the opposite side until golden brown.
Remove from the cauldron and let drain on an absorbent paper napkin.
Eat immediately, alone or with cheese and butter
