A warm greeting to all members of this community. Today, I bring you a super simple recipe for those days when our digestive system feels down, and we need to have a light and healthy diet to avoid any discomfort. This recipe is a pumpkin cream, and to prepare it, we need the following ingredients:
INGREDIENTS
  • Pumpkin (approximately 500g)

  • 1 Onion

  • 2 sweet peppers

  • A pinch of salt

  • 2 cups of water

  • Parsley or cilantro (whichever you prefer)

TOOLS OR UTENSILS
  • Pot

  • Blender

PREPARATION

Step 1. The first thing we need to do is take our pumpkin and remove the skin and the inner coating where the seeds are located. Then, we are going to cut it into small pieces so that it fits better in the pot we will use along with the other ingredients. We will also cut our onion into large pieces and the sweet peppers. They don't need to be very large pieces since we will later blend them.

Step 2. Once everything is cut, we will put it in a pot along with 2 cups of water and a pinch of salt. In this case, I only added a pinch of salt because the person for whom I was preparing this cream has a low-sodium diet.

Step 3. We will place the pot on the stove over medium-high heat. The goal is for the vegetables to soften and the water to evaporate. We will leave it on the heat for 35 to 40 minutes.

Important note: Before the water starts to evaporate, add the parsley or cilantro to flavor the vegetables.

Step 4. Once the vegetables are tender, let them cool and then transfer them to the blender and blend until you get a thick cream. If necessary, add some of the water left in the pot to make the cream smoother.

Step 5. Finally, all that's left is to serve it in a dish and enjoy. I added some leaves for decoration, hahaha, I'm a real chef.

Personally, I really like this kind of cream. It can be served as a side dish for lunch or as a snack in case you can't eat heavy meals.

This is my recipe, but what would you do to make it even better? I will be reading and taking suggestions.

Thanks for reading <3
