Hello everyone! I hope you are all doing well; I am doing great too. Today, I am here with a new recipe video: Egg Curry with Eggplant. While we don't usually prefer eggplant with eggs—often favoring potatoes with eggs instead—this particular dish turns out to be something quite unique: a delicious stew made with eggplant and eggs. Bengalis often prepare various types of stews for breakfast, and this eggplant-and-egg recipe is a standout among them. So, without further ado, let's get started.
ingredients:
➤Four boiled eggs (duck and chicken eggs)
➤Four or five eggplant strips
➤Two chopped onions
➤3-4 green chilies, slit lengthwise
➤ one teaspoon of chili powder
➤One teaspoon of turmeric powder
➤one teaspoon of Coriander powder
➤10 grams of mustard oil
➤Salt to taste
step by step :
First, heat some mustard oil in a pan and lightly fry the boiled eggs; once lightly fried, set them aside in a bowl. In the same oil, sauté chopped onions and sliced green chilies. Next, add turmeric powder, chili powder, coriander powder, and salt to taste, stirring the mixture well. Once the spices are sautéed, add the chopped eggplant. Pour in half a cup of water and cook until the eggplant is tender. As the water reduces, add the fried eggs back into the pan and increase the heat. Add another cup of water and continue to cook for 15–20 minutes. Once everything is thoroughly cooked and the gravy has thickened to your preference, remove it from the heat. And there you have it—our dish for today: eggplant and egg curry!
Eggplant recipes are widely loved; people both at home and abroad enjoy them immensely. Consuming eggplant can help prevent cancer, and it is also rich in iron. Eggplant is versatile—it can be used in various curries or prepared as a fried dish. Sometimes, begun bhorta (mashed eggplant) makes for a great breakfast option. Do let me know in the comments how you liked this eggplant recipe! Stay well and stay healthy. I will be back soon with another new video. That’s all for today!
