Here is wishing you to a wonderful start of the week 😊 One of my friends are out of town and she asked me to cat-sit her only kitty throughout this week. Boys have dentist appointments, I also has to go for a check up. Gonna be a busy week 😊 I am crossing fingers the week will be filled happiness, good news, positivities 😊
Yesterday morning my heart was broken, though. I mentioned my cherries will be ready for harvest soon, and on Sunday morning as I went to the backyard to water, a bigger branch was laying on the ground. So many cherries 💔 I wonder if it was too heavy. This year, I noticed the tree growing more cherries and bigger fruits. I was so expecting to harvest nice ones. Funny, during thunderstorm with super heavy winds, it was just fine. Last night there was nothing. No wind, no rain 🫤 I wondered how did that happen, all day long 🫤 Ah well 🫤
For today's recipe share, it's Burrito Rice Bowl. My oldest's favorite. He can eat a lot of it. My youngest, not so much, unless no greens in it, as in cilantro, green onion, anything green is a no-no for him 😅 I did make separate batch for him so that he eats similar to us 😊
2 c of raw rice, cook in rice cooker
500 g ground beef
1 small onion, dice/slice
10 garlic, dice/slice
1 tbsp chicken bouillon powder
2 tsp ground coriander
1 tsp ground cumin
1 can black beans, drain and rinse
1 can sweet corn kernels, drain and rinse
3 bell peppers, dice
5 green onion, slice thinly
A whole bag of cilantro, slice thinly
Indonesian Boncabe level 15, to taste
Ground cumin, to taste
Lime juice, to taste,
1 tbsp Chicken bouillon powder, or to taste
Brown beef, stir in onion and garlic until softened, season with chicken bouillon powder, ground cumin, and ground coriander.
In a bowl, mix everything, add in cooked beef and cooked rice, and season with Boncabe, lime juice, ground cumin, and chicken bouillon powder.
Serve immediately 😊
