Hello to all steemians, this is definitely one of my favourite dish: "Fregola al nero di seppia". Frègula is a type of semolina pasta produced in Sardinia, it's made by "rolling" the semolina into a large earthenware bowl and roasted in the oven.

Serve 2 people:

2 tbs olive oil
1 small onion chopped finely
1 clove of garlic chopped finely
1 cuttlefish or squid
2 prawns
1 and half cup of fregola ( about 120 gr )
1/2 glass of white wine
1 tbsp of tomato sauce
2 tsp of cuttlefish ink or squid ink
2 glass of water
salt
a pinch of chopped parsley

Heat a pot with olive oil, add garlic and onion and cook until the onion turns golden, being careful not to burn the garlic, add the cuttlefish and prawns and sauté for a few minutes, add the fregola and toast it as if it was a risotto, pour the white wine and let it evaporate, add the tomato sauce and cook for a few minutes, add the water and the salt and cook over low heat. It is a good idea to stir continuously to prevent the fregola from sticking to the bottom of the pan. Finish it with the parsley and serve.

The cooking time varies according to the size of the fregola.
