To be honest I failed the first time I tried to cook kare-kare last year. The sauce was too watery and I didn't even finish it so I got a bit shy to try again.
Yesterday I had leftover lechon kawali from the palengke and I said why not try again. I didn't follow any exact recipe. I just used the creamy peanut butter I have at home, added hot water and a little atsuete powder for the color. I think I put too much peanut butter but it's okay.
I boiled the sitaw and talong separately because I don't want them to be too soft. Then I just mixed everything in one big pan. The pork skin was still a little crispy even with the sauce, that's my favorite part.
I ate it with plain rice and bagoong on the side. Honestly not bad for a first real try haha. I was just eating alone but I felt proud.
Not bad for a home cook like me. Next time I will try with oxtail.
