Slice the bacon in small pieces and fry in a saucepan until crisp. Put it on a plate.
In a saucepan, leave 2 tablespoons of fat. Throw diced onions, carrots and celery. Season with salt and pepper and wait until the vegetables are soft. Add chopped garlic, and after 1 minute, add flour. Cook for another 2 minutes.
Add chopped thyme and cauliflower divided into florets. Pour in the broth and milk. Bring to a boil and cook on low heat for 15 minutes, until the cabbage is soft. Salt and pepper to taste.
Before serving, add fried bacon to the soup.
