250g butter, softened
150g sugar
2 eggs, room temperature
1/2 teaspoon vanilla
750g flour
1 teaspoon baking powder
Caramel Filling:
1 can of caramel - you can make your own by boiling a can of condensed milk
Cookie crumbs
150g cups sugar, might need more or less
Fresh mint
To make the peach colors look natural, I have used the following measures, but this might depend on your food coloring:
Yellow colour:
120g milk
35 drops yellow food coloring
1 drops red
Orange colour :
120g milk
20 drops yellow food coloring
60 drops red food coloring
Step 1: Preheat the oven to 180 C or 350 F.
Step 2: Cream the butter and sugar in a bowl with the paddle attachment on a standing mixer or using a hand mixer until fluffy.
Step 3: Add eggs and vanilla and mix until combined.
Step 4: Whisk the flour and baking powder in a small bowl until mixed. Add to the cookie batter and mix just until incorporated. I like to do it by hand with a spatula.
Step 5: Form balls about half tbsp each and place about 1½ inches apart on the prepared baking sheet. Step 6: Bake the cookies for about 11 minutes and then let them cool completely.
Step 7: Using a serrated knife cut out a circle from the center of the bottom of the cookie, leaving a small border on the outside. Scoop out the center. Be very gentle when doing this since the cookie is very fragile and may break if you're not careful.
Step 8: Leave all the cookie crumbs in a bowl. Add 1 can of caramel and mix well.
To create the cookies:
Step1 : Fill the scooped out center of the cookie with the filling using a small spoon.
Step2: Place two of the cookies filling side together and gently press together.
Step 3: Take 3 small bowls and fill one with sugar and the other two with the dyed milk. Dip half of the pastry in the Yellow liquid and coat in the sugar.
Step 4: Dip the other side of the pastry in the Orange liquid and also dip in the sugar.
Step 5: Place the pastries on an aluminum lined cookie sheet and dry for at least 1 hour. Step 6: Right before serving, place a mint leaf in the center of some of the pastries and serve.
