Greetings, dear vegan family! Today I want to share a vegan kitchen staple with you. It's a simple recipe, but one that serves as a base for many others, and I'm referring to PUMPKIN PUREE, an ingredient that can be used to make sweet and savory dishes, as well as drinks. I wanted to make this puree because a few days ago I asked my husband to buy me a pumpkin, and he brought me two beautiful tree squashes, so I decided to process the smaller one. I was also inspired by the ideas I saw on the Instagram account, EL PISO VEGANO (The Vegan Floor). ¡Saludos querida familia vegana! Para hoy les quiero compartir un básico de la cocina vegana. Es una receta simple, pero que sirve de base para otras, y me refiero al PURÉ DE CALABAZA, un elemento que nos puede servir para elaborar platos dulces y salados, así como bebidas. Quise hacer este puré, porque días atrás le dije a mi esposo que me comprase una calabaza, y me trajo dos hermosas calabazas de palo, así que me decidí a procesar la más pequeña. Besides the puree, here I show you what I will do with the seeds and the pumpkin skin, because everything must be used. That said, let's get to my recipe.

Además del puré, aquí les muestro qué haré con las semillas y la piel de la calabaza, porque todo hay que aprovecharlo. Dicho esto, ¡vamos a mi receta!

THE RECIPE / LA RECETA


Time, ingredients and equipment

  • Preparation time: This recipe takes approximately 40 minutes.

  • Servings: I used a pumpkin weighing about 1 kilo, but the size is irrelevant; you can use as much pumpkin as you like.

The quantities of ingredients listed below can be varied according to availability and personal preference. Be creative!

  • 1 pumpkin, in this case about 1 kilo. I used the thick-skinned, creamy-textured variety, which in my town is known as "auyama de palo" (tree pumpkin). As I mentioned, the weight or quantity of pumpkin is irrelevant.

  • Enough water to steam the pumpkin and wash the seeds.

  • Cutting board, plate, bowl, steamer, knife, spoon, clean glass jar for storing the puree, etc.

Tiempo, ingredientes y equipo

  • Tiempo de preparación: La receta requiere aproximadamente 40 minutos.

  • Raciones: Aquí usé una calabaza de aproximadamente 1 kilo, pero realmente es irrelevante el tamaño, ustedes pueden usar la cantidad de calabaza que gusten.

Las cantidades de ingredientes que a continuación presento, pueden variarse, de acuerdo a la disponibilidad y gusto de cada quien. Sean creativos.

  • 1 calabaza, en este caso de aproximadamente 1 kilo. Yo usé la variedad de piel gruesa y textura cremosa, que en mi pueblo se conoce como auyama de palo. Como ya dije, es irrelevante el peso o la cantidad de calabaza.
  • Agua suficiente para hacer al vapor la calabaza y para lavar las semillas de la misma.
  • Tabla de picar, plato, escudilla, olla vaporera, cuchillo, cucharilla, frasco de vidrio limpio para almacenar el puré, etc.

THE PROCEDURE / EL PROCESO


Cut the pumpkin in half to remove the seeds and the fibrous core. Here you can see the beautiful color and that it's full of seeds—fantastic! If it has a stem, as is the case with this pumpkin, remove it as well.

Picar la calabaza a la mitad, para extraer las semillas y la parte fibrosa del centro. Aquí pueden ver el hermoso color y también que está llena de semillas, ¡estupendo! Si tiene pedúnculo, como es el caso de esta calabaza, retirarlo también.

Cut the pumpkin into small pieces and place them in a steamer. Steam over medium heat for about 30 minutes, or until the squash is very soft. Rinse the seeds with a little water and separate them from the fibrous outer layer. Set aside. This fibrous part can be used in the puree, but I decided to give it as a snack to the few tortoises I still have. I'll put the peduncle or stem in the compost bin.

Picar en trozos pequeños la calabaza y colocarla en una olla vaporera. Llevar a fuego medio por aproximadamente 30 minutos o hasta que la calabaza esté muy blanda. Lavar con un poco de agua las semillas, y separarlas de la parte fibrosa que les envuelve. Reservar. Esta parte fibrosa puede usarse dentro del puré, pero decidí darla de merienda a los pocos morrocoyes (tortugas de tierra), que aún tengo. El pedúnculo o tallo lo colocaré en el compostero.

Once the pumpkin is soft, remove it from the heat and let it cool until lukewarm. Note that I used a steamer to save on gas, but ideally, you should bake the pumpkin; this makes the puree firmer and less moist. Remove the pulp from the pumpkin skin. Set the skin aside. Mash the pumpkin until you have a smooth puree.

Cuando ya la calabaza esté blanda, retirar del fuego y dejar reposar hasta que entibie. Cabe señalar que usé la opción de la olla vaporera, porque estoy ahorrando gas, aunque lo ideal es hornear la calabaza, así el puré es más firme y con menos humedad. Retirar la pulpa de la piel de la calabaza. Reservar la piel. Aplastar la calabaza hasta obtener un puré suave.

Place the puree in a very clean glass jar. Cover and refrigerate. As you can see, this puree turned out firm and a beautiful yellow-orange color. This will be the star ingredient in other recipes that I will share with you soon.

Colocar el puré en un frasco muy limpio de vidrio. Tapar y refrigerar. Como pueden ver, este puré quedó firme y de un hermoso color amarillo-naranja. Este será el ingrediente estrella de otras recetas que compartiré con ustedes próximamente.

Regarding the seeds, once cleaned but still moist, it's a good idea to season them and add spices. This time I used fine salt, onion powder, and Spanish paprika. Stir them and then cook over low heat until golden brown. I'll also use these seeds in future recipes.

Con respecto a las semillas, una vez limpias, pero aún húmedas, es conveniente sazonarlas y añadirles especias. En esta ocasión usé sal fina, cebolla en polvo y pimentón español en polvo. Remover y luego llevar a fuego bajo hasta que estén doradas. También usaré estas semillas en próximas recetas.

As for the pumpkin skin, even though it's very tough in this particular variety, it softens when cooked thoroughly. So, chop it up and keep it in the refrigerator; it can also be used in other recipes. You'll see.

En cuanto a la piel de la calabaza, aún cuando esta es muy dura en esta variedad específica, al cocinarla bien se ablanda, así que éstas se pican y se reservan en la nevera, que también sirven para hacer nuevas recetas. Ya verán.
