Today I’m gonna show you how to prepare a special dish which is the oldest Thai fried rice since King Rama IV era over a century ago and still eat until nowadays and its call Railway Fried Rice or Khao Phat Rod-Fai. 😍
 

🇹🇭 Khao means Rice while Phat is to Stirred and Rod-Fai refers to Train. 🚂

🇹🇭 Since The first railway line was built in Thailand and there are the passengers seeking for ready food to eat then vendors invented Fried rice with meat was wrapped with banana leaf and tied up with Water Hyacinth rope and offers the fried rice to hungry passengers via the window when the train was stop at the station.

Railway fried rice prepared with Thai jasmine rice and contained with pork or shrimp, egg, onions, garlic, tomatoes, Chinese broccoli and seasoning with dark soy sauce are stirred fried together over high heat. Then served with cucumber slices, lime, spring green onion and Thai chili fish sauce dip.

The characteristic of Railway Fried Rice is the dark soy sauce and some version using the ketchup or fermented bean curd as well which'll give the pink color to railway fried rice instead of dark color. 😄

Thai railway fried rice is incredibly easy and quick to make so let's see the ingredients!

  • 1 Cup Steam Jasmin Rice
  • 10 Shrimp
  • 10 Thai garlic with skin
  • 1 Cup Chinese Broccoli
  • 1 Tomato
  • 1/4 Onion
  • 3 Spring Green Onion
  • 1 Teaspoon Soy Sauce
  • 1 Teaspoon Seasoning Soy Sauce
  • 1 Tablespoon Dark Soy Sauce
  • 1 Teaspoon Sugar
  • 1 Tablespoon Vegetable Oil
  • 1 Egg
  • Cucumber Slices and Lime slice
  • Chili, Garlic and Fish Sauce for Dip Sauce

Let’s get cooking!

Prepare the veggie first

  • Sliced the onion, spring green onion and tomato.

  • Slices the Chinses broccoli leaf into small pieces.
  • Peel the skin from the stem and sliced into small pieces.

Let's prepare the Chili Garlic Fish Sauce Dip

  • Sliced the garlic and chili.

Time to prepare the Shrimp.

  • Cut the edge of shrimp's head and peel skin away. Then cut through the back and pull the black vein away.

Let's stirred fried

  • Smash the garlic with skin because of the skin will give more fragrance smell.

  • Pour the oil into the wok over high heat and whisk it quick until cooked and set aside.

  • Pour the oil into the hot wok and drop the garlic and stirred it until golden yellow and drop the egg and fried it until cook for both sides.
  • Drop the rice and the stem of Chinese broccoli into the wok over high heat.

  • Continue stirred the rice and drop the onion and tomato and the leaf of Chinese broccoli and stirred together.

  • Drop the shrimp, all the sauce and sugar and whisk together.
