Although I'm not an expert cooker, but, sometime I try my best to prepare any simple but delicious dish. "Egg Curry" is one of my favourite dish. As I am a Bengali so I like spicy food, and for this reason I made this dish much spicy.
Ingredients
Duck Eggs
Boiled Potatoes
Sliced Onions
Green Chilies
Cooking Method
(i) Do full boil eggs & peel the shells carefully.
(ii) Take another pot & do half boil potatoes, peel them & cut in cube.
(iii) Slice onions. Take a mixi & blend ginger and garlic separately; make paste.
(iv) Take a pan, pour oil & put cumin seeds, black cumin seeds, sliced onions, garlic & ginger paste. Lower the flame.
Pour Mustard Oil
Add Cumin seeds & Black cumin seeds
Add onions, ginger paste, garlic paste
(v) Add 1 tablespoon of turmeric powder, cumin Powder & Kashmiri red chili powder.
(vi) Pour a little water, add a pinch of salt & keep the flame lowest. Wait 2-3 minutes.
(vii) Now, add green chilies, boiled potatoes & eggs. Add 1 tablespoon of turmeric & cumin powder. Fry until potatoes & eggs turn to golden colour.

(viii) Pour sufficient water, add bay leaves, 2 tablespoon Kashmiri red chili powder & garam masala. Set flame at medium state. Cook for 2 minutes. Now, add 1/2 tablespoon dry mango powder. Add salt as needed. Cover the pan with lid. And cook it for at least 15 minutes.
(ix) After 15 minutes put off the lid & taste it. Your favourite "Egg Curry" dish is almost ready.
Pour water, add bay leaves, Kashmiri red chili powder, dry mango powder, garam masala & salt. Set flame at medium state
