Today we will take a break from baking, to share with you a recipe full of flavor that I was preparing at home a few days ago. It is a curried lentils with carrots and cream cheese and lemon dressing.
I found this recipe looking for different options to consume vegetable protein at home, and luckily my kids love legumes, especially lentils, so I decided to work with them, and incorporate some flavors that we don't use often at home, and see how it all turned out.
And to start with, I didn't use the lentils we are used to at home, which are a strange color, between green and brown, but much smaller and quite striking orange, and seasoned them with garlic, ginger, curry and coriander.
The result, simply great and luckily my kids loved the combination of flavors, and as a plus, it's a pretty simple dish to prepare, so here are the ingredients.
INGREDIENTS
For the lentils
400 grams of lentils
1 large carrot
1 onion
3 cloves of garlic
1 sprig coriander
1 teaspoon grated ginger
1 tablespoon curry powder
2 cups water
2 tablespoons oil
For the dressing
100 grams of cream cheese
Juice of one lemon
Chives
Cilantro
PROCEDURE
For the lentils
The first thing we will do is to finely chop all the vegetables and grate the fresh ginger, for which we will peel it with the help of a spoon, and with the smallest part of the grater, we proceed to grate the amount we need.
Then peel and cut the carrot into small cubes.
Then in a good size frying pan we fry the vegetables in the two tablespoons of oil.
Once the onion is crystallized, add the curry and continue cooking for a few minutes, then add the carrot and sauté with the rest of the vegetables for three minutes.
Add the lentils and the two cups of water, lower the flame to the minimum and let them cook until they are soft, which should not take more than 10 minutes.
As you can see, I did not add salt, because actually with the amount of flavors, salt is not necessary, but if you wish you can add it to your taste.
For the dressing
The original recipe was with yogurt and although my husband searched, he didn't find any close to home, so it occurred to me, I could make it with cream cheese, which I didn't have either, but it would be easy to make. All I needed was a cup of milk and a big spoonful of vinegar.
So I put the milk on low heat until lukewarm, removed it from the stove and added the tablespoon of vinegar and let it sit.
Immediately you can see how the solid matter and the whey are separated, so what I did was to strain it, add the lemon, the chives and the cilantro and that was it.
If you wish, you can process it, but I didn't think it was necessary, so I simply mixed everything very well.
We served these lentils with a spoonful of dressing and homemade pita bread. A delicious and balanced meal that delighted everyone at home. Next time I prepare them I will make sure I have the yogurt and I will let you know if it makes a difference.
