I don't know if this has ever happened to you, feeling a crazy desire to eat something sweet and not having at home everything you need to prepare a dessert, but it happens to me often and I end up doing experiments to calm my sweet craving and that's how these cupcakes I bring you today were born.
Hi #hivefood guys, I hope you had a wonderful week, today I come to tell you a little of my sweet craving crisis and the crazy things I do to fulfill my whims when I don't have at home everything I need to make something in the traditional way or as I'm used to do it.
In this case, yesterday I wanted to eat cupcakes and I have a super easy recipe, which is always perfect but I did not have margarine at home, so at first I gave up, but as the afternoon progressed more and more I wanted to eat the cupcakes so I started thinking that maybe I could substitute margarine for oil, anyway, I prepare a cake that has oil and not margarine. So with that in mind I said to myself "let's do it!".
The original recipe is prepared with 100grs of margarine, 100grs of flour, 100grs of sugar and 1 egg, so I thought I could substitute the 100grs of margarine for oil, but immediately I ran into a problem, since creaming the margarine with the sugar is one of the factors that allows the cakes to be very fluffy and after thinking a little it occurred to me that I could beat the egg white until stiff and that would fulfill the function of adding air to the mixture.
So with that problem solved I thought that everything was ready, but it was not, because while I was beating the egg whites I decided to advance a little the preparation so I mixed the dry ingredients and I started to add the oil and as soon as I did it, I realized that I would need some liquid because it formed a kind of paste, so I added water until I got the desired texture and then powdered milk.
Now I only had to add the whipped egg whites and that was it, but since we were inventing it occurred to me to add grated coconut that I had at home and since I was at it, why not add a little coconut essence to reinforce the flavor, taking advantage of what I had available and that's how instead of vanilla cupcakes I ended up preparing some coconut cupcakes without margarine.
But it didn't stop there! Once I introduced the first batch of mini cupcakes and saw that there was some leftover batter, I came up with another idea! What if I added cocoa powder? It didn't seem crazy to me, since I have tried chocolate bars with coconut and they are delicious, so without thinking too much, while the coconut ones were in the oven I added cocoa to the mix and a little more milk because the cocoa thickened it enough.
Once the coconut ones were ready (they didn't make that nice curve that I like to see on top of the cupcakes) I removed them from the oven and introduced the chocolate ones, without much hope that they would be as I like them on top, but to my surprise they did form the curve that I like so much.
Now all that was left was to check the flavor and texture and I must say that although the coconut ones did not rise the way I like (I think the mixture was too liquid) they were super fluffy, moist and with lots of coconut flavor and finding little pieces inside gives them a very special plus.
The chocolate ones were also super yummy, the mixture of chocolate and coconut definitely works very well, but with these ones it happened that although they took the shape I like I added too little mixture in the layer and they didn't reach the top, but their flavor and texture were perfect.
As you can see this was all about trial and error, but without a doubt it helped me to experiment in the kitchen with new recipes and combinations and I am sure that for a next attempt if I add a little more flour (in the case of the coconut ones) and maybe a touch of vinegar they will take the shape I like. And in the case of the chocolate ones, add a little more mixture to the layer!
And this is what I love about cooking, being able to experiment and learn from mistakes, discover new things that I can offer to my customers and of course enjoy at home, because these cupcakes were for us and the truth is that they were super rich and I say they were because today they no longer exist!
In my refrigerator I had buttercream prepared and I separated two parts. I added coconut essence to one and cocoa powder to the other, I put a portion of each in a piping bag and we frosted the cupcakes to give them a special touch and they are definitely a bite of heaven!
And at this point you may be wondering, "and where is the recipe? ", well the truth is that I did a lot of things by eye, but I will leave you the ingredients used and the step by step that I followed, but a little more organized, because as I was trying everything was a little crazy! So take note!
INGREDIENTS
100grs leavening wheat flour
100grs of sugar
100grs of oil
1 egg
Milk (quantity needed)
1 teaspoon of coconut essence
1/2 cup grated coconut
1/4 cup cocoa powder
The cocoa and coconut are optional because in my case I had them available, but a spoonful of vanilla or lemon juice would be perfect too.
INGREDIENTES
100grs de harina de trigo leudante
100grs de azúcar
100grs de aceite
1 huevo
Leche (cantidad necesaria)
PROCEDURE/PROCEDIMIENTO
Beat the egg white until stiff with half of the sugar. Sift the dry ingredients, add the oil, the milk, the egg yolk and mix very well until everything is incorporated and add the whipped egg whites to the mixture in an enveloping way.
Remember that it should not be too liquid, so add the milk in small portions and mix very well.
At this point I added the coconut and the essence and took the coconut cupcakes to the preheated oven at 180°, which I sprinkled with grated coconut that at the end was toasted a little in the oven. If you do not mind eating it this way you can add it and if not forget this step.
Bake for about 15 minutes.
Add the cocoa to the remaining mixture. Bake in the oven and it's ready.
Incorporar el cacao a la mezcla restante. Llevar al horno y listo.
If you have a sweet tooth like me you can frost them, although if I'm honest, you don't need frosting, in fact I ate some without frosting to try the taste and texture and I will definitely leave the next ones I make without frosting because they were perfect and another change I will make is that they will no longer be minis, but normal cupcakes!
And well friends, this was my Friday afternoon experiment when sweet tooth anxiety attacked me. I hope you can make them at home and are encouraged to experiment with new flavors and ingredients that will surely surprise you with the results.
See you another time. Kisses and blessings!
Besitos y bendiciones!
