Hello foodies, qué tal su fin de semana? Por aquí todo bien, casi listos para la vuelta a clases. Hoy quiero compartir con ustedes una opción relativamente rápida (no les puedo mentir) y sumamente deliciosa para resolver un almuerzo de fin de semana pero sin sacrificar el sabor: una Frittata de papas, chorizo y plátano. Esta receta nació de la idea de juntar ingredientes que todos amamos en casa y porque la verdad hace bastante que no preparaba frittata, y saben que a mí me encantan, así que hoy fue el día de complacer ese antojo.

Hello foodies, how was your weekend? Everything’s going well here—we’re almost ready for back-to-school. Today I want to share with you a relatively quick (I won’t lie to you) and incredibly delicious option for a weekend lunch that doesn’t sacrifice flavor: a potato, chorizo, and plantain frittata. This recipe came from the idea of combining ingredients we all love at home—and honestly, it’s been quite a while since I’ve made a frittata, and you know I love them, so today was the day to satisfy that craving.


A diferencia de las tortillas tradicionales que preparamos en sartén, la frittata es al horno, así que nos ahorramos el estrés de darles vuelta y correr el riesgo de que se rompan, y la verdad es que estéticamente hablando la frittata es una belleza, y por demás provocativa. Además es ideal para manejar porciones grandes como en mi caso que usé 10 huevos.

Otra de las grandes ventajas es que al cocinarse directamente en un molde refractario, y de manera más lenta, los sabores se concentran, el huevo se torna mucho más grueso y los ingredientes superiores se doran a la perfección, quedando un plato colorido y muy provocativo. Perfecto para salir de apuros, así que acompáñenme a ver el paso a paso!

Unlike traditional tortillas that we make in a skillet, the frittata is baked in the oven, so we avoid the stress of flipping them and the risk of them breaking. And honestly, from an aesthetic standpoint, the frittata is a thing of beauty—and incredibly tempting. It’s also ideal for making large portions, as in my case, where I used 10 eggs.

Another major advantage is that by cooking it directly in an ovenproof dish—and at a slower pace—the flavors become more concentrated, the egg sets much thicker, and the toppings brown to perfection, resulting in a colorful and very appetizing dish. It’s perfect for a quick fix, so join me for the step-by-step guide!

Procedimiento / Procedure

Para nuestra Frittata de papas, chorizo y plátano, es necesario cocinar previamente las papas, los chorizos y el plátano, por lo que lo primero que hice fue cortar las papas en rodajas, las sancoché ligeramente para asegurar que su centro estuviera cocido y luego las llevé a la sartén con un buen chorrito de aceite de oliva, sal y orégano, hasta que estuvieron doradas. En ese mismo orden de preparación, piqué el plátano maduro en rodajas y lo freí hasta lograr ese colorcito dorado.

For our Potato, Chorizo, and Plantain Frittata, you need to pre-cook the potatoes, chorizo, and plantain, so the first thing I did was slice the potatoes, parboil them briefly to make sure the center was cooked through, and then sauté them in a skillet with a generous splash of olive oil, salt, and oregano until they were golden brown. Following the same sequence, I sliced the ripe plantain and fried it until it turned a golden brown, and finally, it was the chorizo’s turn—we browned it in olive oil with a touch of oregano.


A continuación, nos encargamos de la proteína de nuestro plato, y para esto, en una sartén sofreímos los 4 chorizos cortados en rodajas junto con orégano molido hasta que tomen un bonito color dorado. Por otro lado, en un bol, agregamos los 10 huevos junto con la sal, la pimienta, y la cucharadita de paprika ahumada, batiendo con fuerza hasta lograr que la paprika se disuelva muy bien y la mezcla tome un bonito tono anaranjado, además de garantizar uniformidad en el sabor.

Next, we’ll prepare the protein for our dish. To do this, sauté the 4 sliced chorizos in a skillet along with ground oregano until they turn a nice golden brown. Meanwhile, in a bowl, add the 10 eggs along with the salt, pepper, and a teaspoon of smoked paprika, whisking vigorously until the paprika dissolves completely and the mixture takes on a nice orange hue, ensuring an even flavor.


En este punto ya tenemos todos nuestros ingredientes preparados, así que estamos listos para integrar todo en nuestro refractario y lo que hacemos es incorporar la mitad de los huevos, y seguidamente las papas, chorizo y plátano frito. Distribuimos todo muy bien en el refractario y por último, agregamos la última parte de nuestra mezcla de huevos y dejamos reposar todo junto por 5 minutos.

At this point, we have all our ingredients prepared, so we’re ready to combine everything in our baking dish. First, we add half of the eggs, followed by the potatoes, chorizo, and fried plantains. We spread everything out evenly in the baking dish, and finally, we add the remaining half of the egg mixture and let it sit for 5 minutes.


Para finalizar, con la ayuda de una espátula, presionamos suavemente los ingredientes hacia abajo; un truco súper importante para compactar la estructura interna de nuestra frittata y asegurar que las rodajas de plátano y chorizo superiores queden niveladas, no queden piezas sueltas y luzcan hermosas al salir del horno. Llevamos el refractario al horno precalentado a 200° y dejamos cocinar hasta que el centro esté firme, inflado, completamente cocido y veamos una superficie hermosa como la de aquí abajo.

Finally, using a spatula, gently press the ingredients down; this is a super important trick for compacting the internal structure of our frittata and ensuring that the top slices of banana and chorizo are level, that there are no loose pieces, and that it looks beautiful when it comes out of the oven. Place the baking dish in an oven preheated to 200° and bake until the center is firm, puffed up, fully cooked, and the surface looks as beautiful as the one shown below.


Como pueden ver en las fotografías del resultado final, el plato adquiere un grosor genial una apariencia espectacular, y ni hablar del sabor, y es que cada bocado ofrece el equilibrio perfecto entre la suavidad de la papa, la intensidad del chorizo y el contraste dulce del plátano maduro. Es una alternativa increíble para salir de la rutina con lo que tenemos en casa de una forma muy vistosa y deliciosa!

As you can see in the photos of the final result, the dish has a great texture and looks spectacular—not to mention the flavor. Every bite offers the perfect balance between the creaminess of the potato, the boldness of the chorizo, and the sweet contrast of the ripe plantain. It’s an incredible way to break out of the routine using what we have at home—and it’s both visually appealing and delicious!
